SOFT SHELL CRAB

Soft-shell crab is a term used to describe crabs that have recently molted and, during this phase, have soft, pliable shells that can be eaten whole. The crabs are harvested before their new shells harden. This stage occurs when the crab has outgrown its existing shell and sheds it to allow for growth.
